Quick Recipe: Teriyaki Chicken Drumstick
INGREDIENTS

1 tablespoon peanut oil

10 chicken drumsticks

80ml (1/3 cup) light soy sauce
-
2 tablespoons rice wine vinegar
-
2 tablespoons honey
-
1 teaspoon sesame oil
-
2 tablespoons brown sugar
-
3 garlic cloves, thinly sliced
-
1 tablespoon finely chopped fresh ginger
-
1 bunch buk choy, sliced lengthways
-
Steamed brown rice, to serve

Thinly sliced green shallots, to serve

Toasted sesame seeds, to serve
METHOD

Step 1: Heat the peanut oil in a large non-stick frying pan over high heat. Add the chicken drumsticks. Cook, turning occasionally, for 10 minutes or until browned then transfer to a slow cooker.

Step 2: Meanwhile, combine the soy sauce, vinegar, honey, sesame oil and sugar in a jug.

Step 3: Add the garlic and ginger to the frying pan. Cook, stirring, over high heat for 30 seconds or until aromatic. Add the soy sauce mixture and stir until combined. Pour into the slow cooker. Cover and cook on Low for 5 hours or until the chicken is very tender, adding the buk choy in the last 15 minutes of cooking.

Step 4: Place rice in serving bowls. Divide the teriyaki chicken drumsticks and buk choy mixture among the bowls. Sprinkle with shallots and toasted sesame seeds to serve
