Quick Recipe: Beef Steak
Ingredients

1kg TMB Steak (Beef) or Fillet Mignon

500g baby potatoes, quartered

1/4 cup (60ml) olive oil
-
175g pkt Sweet Minicaps, quartered, seeded

1/3 cup (55g) Almonds & Pine Nuts

1/3 cup flat-leaf parsley, chopped
-
1 1/2 tablespoons lemon juice
-
1 tablespoon lemon zest
-
60g pkt Baby Spinach
-
1/2 small red onion, thinly sliced

1 tablespoon balsamic vinegar
Method

Step 1: Firstly, Preheat oven to 220C. Line a large baking tray with baking paper. Place potato in a baking tray. Drizzle with 1 tbs of the oil. Season. Toss to coat. Bake for 20 mins.

Step 2: Secondly, Add the capsicum to the tray and toss to combine. Similarly, Bake for 15 mins or until capsicum and potato are golden and tender. Set aside for 10 mins to cool.

Step 3: Thirdly, heat 2 teaspoons of remaining oil in a large frying pan over high heat. Season steaks. After that, Cook for 1 min each side or until cooked to your liking. Transfer to serving plates. Heat 1 tablespoon of remaining oil in the pan over medium-high heat. After That, Add the nut mixture and cook, stirring, for 1-2 mins or until golden. Remove from heat. Stir in the parsley, lemon juice and lemon zest. Finally, Spoon over steaks.
